Immune Boosting & Detox Soup (Onion & Garlic Soup)

Ingredients:

4 yellow onions (medium) - sliced

15-20 garlic cloves – smashed

3 in. piece of ginger – thickly sliced (easily to remove)

2 c. mixed veggies cut up (broccoli, cabbage, kale, bok choy, etc.) I use the bag of mixed veggies at Freddy’s

2 quarts of Beef Stock or Broth

2 T Tamari Sauce (Soy Sauce)

¼ c of yellow miso 

Juice of 1 lime

1/3 cup of chopped cilantro

Put onions, garlic, ginger and stock into large pot. Bring to a boil turn down to simmer for 1 ½ hrs. with lid on. Stir occasionally. Until the garlic and onion is almost dissolved when pressed on.

Add mixed veggies and soy sauce and simmer for 10-15 minutes more without lid.

Add Miso and lime. Stir to dissolve miso and then add cilantro. Cook for another 5 minutes and serve.

Add more seasoning if necessary.

Remove pieces of ginger. They have done their job!
